In December 2015 I went on a trip to Hong Kong, Spain and San Francisco with my dad, Bill Lee. It was an amazing time and luckily we were still getting along by the time we returned from 12 days of living out of each others pockets. The trip was a mixture of marketing our own truffle ready for 2016 export, as well as learning about the research and practices currently taking place in Spain when it comes to farming truffle.
We met some inspiring chefs who are doing such amazing, and delicious, things with truffles. Unfortunately I did not get photos of them all as I was so happily enjoying the moment and savouring the tastes that pulling out the camera was not really the first thing that came to my mind! Hope you enjoy what I did capture and get some inspiration for what is possible with truffle.
